Veal shouldn't be underestimated either, you can't beat a nice wienerschitzel veal cutlet.
Edited to add - We have a chicken version of wienerschitzel in the UK which we call a chicken escalope, you can also get a pork tenderloin version.
A lot of young male cows are just killed and burned in the UK, might as well use them for meat.

I love veal. It's not so much slaughtering the animals that bothers me, it's how theyare treatedbefore being slaughterd. Baby calves being confinedin cramped cages and darkness kinda sucks. I have said that I won't eat it anymore, but the German restaurant here serves up a mean schnitzel.

I don't have a recipe written in stone, I just kindathrow everything together, but you will find a million recipes if you google bolognese. Just substitute the venison for the beef.

You seem to be on the same page as Ant, my main concern is whether I have to do anything 'special' to prepare the venison before cooking it... but so far it seems I don't.

Syber, I added more of what to do on the site.
Try braising the outside before roasting, it'll seal in the juices and make a lovely coating. Heavily season with salt, pepper and garlic powder and braise away.
