Fish en Papillote. This is so easy, I think I'm going to cook different versions of it every night for dinner until everyone gets sick of it.
I haven't cooked it yet, I made it ahead of time. I drizzled olive oil on the cod and rock shrimp, seasoned with salt and pepper, added raw kale, cherry tomatoes, zucchini, kalamata olives, capers, red onions, red pepper flakes, a splash of white wine and a pat of butter and a lemon slice. Fold it up in the parchment paper like a little pie and bake at 425 for 15-20 minutes depending how thick your fish is. Then dinner is done.
