I was going to say to chop up whatever veggies you have, make a simple vinaigrette and fill the avocado with it, but the baked avocado and eggs look really good too.

Eggs and avocados go great together, but it does scream bloody mary. If you happen to have tomatoes, cheese, oregano or italian seasoning and a pinch of salt and pepper, you could half the tomatoes and top them with a mixture of the seasonings, and cheese and bake them along with the avocados. It might not be a bloody mary, but it's still a tomato.
