Chicken gizzards are the worst or at least they were when my mom cooked them up. She tried to save money by buying cheap meat but they ended up more like rubber.

Back in the day when I was a kid, my mom would simmer Turkey gizzards, onions, & mushrooms in butter for a few hours.
And then add that into her Bread Turkey stuffing. Nothing was ever wasted.
