		I don't know how I'm not fat, but I eat in the middle of the night, too. 
 
World's best artichoke dip, 5 minutes, just made it while I was getting the coffee set up for the morning: 
 
2 cans quartered artichoke hearts in water, chopped up 
1 cup Parmesan cheese (I'm white, so I used the grated kind in the bag that was really 6 ounces, I'm sure MF has a hunk at his house to grate) 
1 cup Hellman's mayo (Best Foods on the other side of the country) 
 
Stick in the microwave for five minutes, salt and pepper to taste, eat on crusty french bread. (It was low carb until I ate the bread.)

This sounds fabulous.  I must confess to using the hunk of parmesan as well.  It just tastes better.  Try it once.
