Well, I happen to think my gravy is best I have ever tasted according to just about everyone i have ever known. It is very rich and heavenly.....I could easily win a contest between u two novices.
Re dressing, I put cornbread crumbs and white bread crumbs in plastic bags night before and squash them with mallet to get crumbs. Chop up celery and onion and place in plastic bag. Next day, saute celery & onions in butter. Dump crumbs, and cooked celery/onions in bowl, then add liquids. I use broth from cooking giblets, and then turkey juices later in cooking process. It is never dry and it might also be best i have ever tasted....I do not cook anymore, but back in the day, I cooked a lot. Of course u have to use appropriate seasonings for the dressing to your liking (sage, thyme, salt, pepper, etc.).
